Nectarine season starts from late May to September. California produces about 95 percent of the nation's nectarines.
Peaches come in season from May to early October. There are many varieties, each peaking at a different time during the season. Each variety has slight differences, but they basically come in white flesh or orange flesh. They are categorized as either clingstone, semi-freestone, and freestone. Clingstone types have their flesh firmly attached to the stone whereas freestone types have flesh that separate easily from the stone.
Plumcots and Pluots are a cross between a plum and an apricot. Plumcots contain more characteristics of a plum, whereas a pluot contains more characteristic of an apricot.
Bing: Firm flesh with a sweet rich flavor. This is the leading commercial variety. Available mid June to mid-August.
Burlat:Sweet with soft flesh. Usually the first to show up on the market. Available May.
Chelan:This medium to large size cherry is round with almost a heart shape. It has a low acid content and has very good dessert qualities.
Lambert:Sweet, rich flavor. This is the second biggest commercial variety. Available late June to mid-August.
Queen Anne (Napoleon):This is an old variety planted in France in the 1600's. It has thin yellow skin with a beautiful red blush. The juice is practically colorless. It is excellent for brining and canning.
Rainier (Pale Flesh):Grows to a fairly large size. The flesh is yellowish-white and has a mild, sweet flavor. Available late June to mid-August.
