Black Mission: Dark-black skin with puple highlights. The meat is pale with a light-strawberry pulp. It has a rich, sweet flavor.
Brown Turkey: Dark-brown skin that gets lighter towards the neck. The flesh is pale-colored with a slightly sweet flavor.
Calimyrna: Yellowish-green skin with white flecks. The shape is rounded and stocky, with a short thick neck.
Kadota: Green to yellowish-green skin. The flesh is white with amber to light-pink colored pulp. It is not as sweet as other varieties, but has a strong, distinctive flavor.
