There are many varieties of garlic throughout the world. Each have their differences, as far as size, color, fragrance, and intensity of flavor. However, they all basically have a "garlic" flavor.
GARLIC
California Garlic: This strain is used primarily for commercial production. There are actually two main strains; California Early and California Late.
Elephant Garlic: This is not a true garlic, but actually a leek. It is extremely large, with very large cloves and has a very mild flavor.
Mexican Red: Available April to July. It has a hot and intense flavor.
Spring Garlic (Green Garlic): This mild flavored garlic is young and tender and can be enjoyed like a vegetable. It is often grilled and eaten whole including the green tops.
