CUCUMBERS

Armenian Cucumber: This slender variety has light-green skin. The skin is very thin and contains ridges. The flesh contains very little seeds.

Cucumber (Slicers): The common varieties of cucumbers seen in the markets are generally referred to as slicing cucmbers.

English Cucumber: These are hothouse grown and are seedless.

Indian Cucumber: These are very small and have a smooth skin.

Japanese Cucumber: Long slender fruit with thick skin and very little seed.

Lemon Cucumber: Oval shaped, with a light-yellow to pale colored skin and a pulpy center. Popular in ethnic cuisine.

Pickling cucumber (Dill): Dark-green skin with little bumps all over. The shape resembles a large peanut.
