Green Cabbage: The "Fresh Market" variety is available year-round and is the most common. It has a sweet flavor and is excellent for coleslaw and cooking.
Kolrabi (Green/Purple): Available year-round, but peak season is in the summer. The flavor is similar to broccoli stems. Small to medium size ones tend to be sweeter and more tender. Avoid any bulbs with visible fibers.
Napa Cabbage: Also know a Chinese cabbage. It is usually braised, used in stir-fry, soups, and salads.
(Long Napa): Can be used the same way as regular napa cabbage. It is preferred by some people because it contains less water.
Red (Purple) Cabbage: Has a mild, sweet flavor. Good for pickling or for adding color to salads. Available year-round.
Savoy Cabbage: Used in Italian recipes and some specialty recipes. It has a sweet flavor that works well in salads also.
