BEANS (FRESH/STRING)

Blue Lakes: This is typically what people refer to as "green bean" or "string bean". The shape is long and round. Color can range from light to dark green.

Chinese Long Beans: These beans can grow up to 18" long. They are thought to be native to Asia, but they grow wild in the Tropical areas of Africa. The flesh is crunchy-chewy and is not very juicy. There is a light-green variety and a dark green variety. The light-green is sweeter, meatier, and more tender. The dark-green is more crisp, fiberous, and less delicate. They are actually more closely related to blackeyed peas than green beans.

Dragon Tongue: This is actually a variety of a Romano bean that has beautiful purple patterns. The flavor is similar to green beans.

Haricot Verts (French Beans): This small, slender variety of green beans was developed and popularized in France. It has a delicate, sweet flavor and a tender crisp texture.

KY (Kentucky Wonder Beans): Very similar to a blue lake except for it's flatter shape.

Romano (Green/Yellow): These beans are flat like the KY beans, but they are much wider. The flavor is more intense than a blue lake and the texture is more firm.

Yellow Wax: This is similar to green beans except for the color. It can simply be described as a yellow colored Blue Lake.
