ARTICHOKES

(Big Heart) Artichokes: This is a thornless variety that is available almost year-round. It is generally conical shaped, with a wide base and a wide heart.

(Desert Globe) Artichokes: This variety has thorns, though not very prominent. It is available from winter through early spring. The bracts (petals), have good, edible portions and the hearts are well developed.

(Green Globe) Artichokes: This is a year-round variety, with the growth in March and April. It has good edibility on its petals and a heavy heart for its size.

Purple Artichokes: The original artichokes from the Mediterranean were purple. This variety is very thorny; has a large heart and a very nutty flavor.

ASPARAGUS

Green: Available year-round, with peak availabilty from January-June and August-October.

White: This is the sweetest variety of asparagus. It is recommended that the skin be peeled before eating.
